ABOUT THE PRODUCT
Our Bologna #2 mix is a classic old-fashioned recipe, a perfect blend of coriander, pepper, nutmeg, and extra garlic goodness. One of our oldest and most popular recipes, it is full of savory, garlicky, and delicious flavors.
Pairs well with all wild game and domestic meats.
1. Combine seasoning packet, quick cure packet, binder flour, & 2.5 cups of water with meat mixture until tacky.
2. Fill pre-soaked casings with meat mixture, fasten with string at desired length, & refrigerate overnight to cure.
3. Bake at 180-200°F in oven or smoker until internal temperature reaches 165°F.
4. Cool & refrigerate or freeze for long-term storage.
Kit includes: 1.38 lb. seasoning, 9 oz. binder flour, 1 oz. quick cure.
