Bologna #2 Seasoning kit includes 1.38 lb. seasoning, 9 oz. binder flour, 1 oz. quick cure. Perfectly portioned kit yields 25 lb. meat.
Important information
SEASONING: SALT, SUGAR, DEXTROSE, SPICES, MSG, SODIUM ERYTHORBATE & GARLIC. BINDER FLOUR: CORN, WHEAT, & RYE FLOURS QUICK CURE: SALT, SUGAR AND *SODIUM NITRITE 6%
1. Combine seasoning packet, quick cure packet, binder flour, & water with meat mixture until tacky.
2. Fill pre-soaked casings with meat mixture, fasten with string at desired length, & refrigerate overnight to cure.
3. Bake at 180-200°F in oven or smoker until internal temperature reaches 165°F.
4. Cool & refrigerate or freeze for long-term storage.
