Todd's Deluxe Summer Sausage Complete Seasoning Kit (Yields 25 lbs)

Directions:

1. Combine seasoning and quick cure packets with 25lbs of meat mixture until tacky (If needed, add 1 oz water per pound meat until proper texture).
2. Fill pre-soaked casings with meat mixture, fasten with string at desired length, & refrigerate overnight to cure.
3. Bake at 180°F in oven or smoker until internal temperature reaches 165°F.
4. Cool & refrigerate or freeze.

Alternative Method: Roll mixture into 9-10" logs of desired thickness & bake in oven at 300°F until internal temperature reaches 165°F (about 1 hour).

Kit Includes: 1.38lbs Seasoning, 1 oz Quick Cure. Yields 25 lbs.
